You can also make these without any egg, just substitute all egg white.
1/2 c all-purpose flour
1/3 c unsweetened cocoa powder, sifted if lumpy
1/4 tsp baking powder
1/8 tsp salt
2/3 c dark brown sugar
1/4 c canola oil
1 lg egg
1 lg egg white
1 tsp vanilla extract
1/4 c mini semisweet chocolate chips
1 c chopped walnuts
1. Heat oven to 350°F. Coat 8"x 8" or 9"x 9" baking pan with cooking spray.
2. Combine flour, cocoa, baking powder, and salt in large bowl.
3. Put sugar, oil, egg and egg white, and vanilla extract in small bowl. Whisk until smooth. Pour into flour mixture and stir until blended. Stir in chocolate chips and walnuts (batter will be stiff).
4. Spread batter in prepared pan. Put in oven and bake 20 to 22 minutes or until firm at edges and wooden pick inserted off center comes out with a few moist crumbs. Place pan on rack and let cool completely. To serve, cut into 8 bars.
